Jessica Stay

General Manager

Jess has been with Per Diem since its opening in 2018, growing from lead server to General Manager. A member of the TFB Hospitality family for nearly a decade, including time at Annie Bailey’s, she leads with warmth, passion, and a commitment to hospitality. Jess loves the ever-changing energy of Per Diem, connecting with guests from around the world, and working with a team that feels like family. When she’s not at the restaurant, she enjoys time with her kids, quiet drives, and the support of the Lititz community she’s proud to call home.

Jonathan Collins

Executive Chef

Chef Jonathan brings passion, creativity, and a dedication to local, ethical farming to Per Diem’s kitchen. A graduate of Johnson & Wales, his career spans training at D.C.’s acclaimed CityZen, work in top NYC and D.C. restaurants, and experience as a bagel shop and deli owner, consultant, and mentor. At Per Diem, he blends artistry with hospitality to craft memorable dining experiences. Outside the kitchen, Jonathan is a proud dad to his four-year-old daughter and enjoys concerts, golf, and time with family and friends.
